You are actually a year too late for the bacon innovation -- I took part in a Bacon cookoff about a year ago. ...I made some cookies, and knew as soon as I showed up (and ended up between a guy who had a bacon-based sloppy joe and a guy who cured his own bacon) that I would lose.

However, the winner devised a bacon-bourbon ice cream. Which could clearly be the next step in your creation. (Plus -- one person who tasted my cookies said they would make a great ice cream sandwich with that ice cream, and I concur.)

The bacon cookoffs are far from over -- they just had one in Austin, and the guy who coordinates these is local. You may want to keep experimenting in the kitchen.
